چکیده
In the work on results of experimental physicochemical and microbiological parameters yogurt with addition biologically active iodine during technological process storage. Raw materials from Buchachagrokhlibprom farm, Buchach, Ternopil region, are used for research. The source is a supplement "Iodis-concentrate", amount in relation to WHO. leavening culture was sourdough TM "Vivo" yogurt. Bacterial composition: Streptococcus thermophilus Lactobacillus delbrueckii ssp. bulgaricus acidophilus Bifidobacterium lactis. calculation performed according instructions.
